2 cups Mushrooms, Chopped
1/2 cup Red Peppers, Chopped
1/4 cup Sun-Dried Tomatoes
1/2 cup Artichoke Hearts, Chopped
1/2 cup Green Onions, Finely Chopped
3 Garlic Cloves, Finely Chopped
1 tbs Herbes de Provence
Olive Oil
Cooking Spray
6 Eggs
1 1/2 oz Goat Cheese, small pieces
1/2 oz Parmesan, Grated
Saute Mushrooms, Red Peppers, Tomatoes, Artichoke Hearts, Green Onions, Garlic in just enough Olive Oil. Place Sauted Veggies in round cake pan that has been sprayed with Cooking Spray. Cover veggies with Eggs and cheeses.
Cook at 350 degrees for 25-35 minutes.
I make this the night before, so in the morning all I have to do is throw it in the oven!
